It sounds like the scene uses too much memory and the system is forced to swap, grinding everything to a halt.
Try to close all other programs and keep an eye on the RAM usage when you start a render.

Does 12gb ram sound like enough to be able to cover an entire sofa in a fur type fabric?

(I don't know how mainy hairs I would actually need as failure kicks in too soon.)

You mean 12 GB total or 12 GB free RAM?

By the way, it might save a lot of memory if you join a patch with a few thousand hairs into one object and use a particle system to instance it over the furniture.

Memory usage for 2'700'000 with simple particle hair setup for an image with 1080^2 pixels is really quite memory demanding even with optimisation set to save memory.

During the last year I've modernised Mac and PC with SSDs and more ram and the PC with a second graphic card.
If may spend your PC some more RAM, should be quite cheap to get older RAM like DDR3 1333.

By the way, I used ribbons for my example, what may be wrong in combination with material if it uses volumes, chose solids insteand. Density, length, etc. and color can be set using a texture, see texture tab particles in blender. Root and tip color did not have any effect on gair colors on Mac version but root and tip size does.
