Mapping a colorramp to the density because color export is friggin' slow.
Scattering scale is probably too low.

I'd like to learn how to create volumes like this and understand the node settings

Here's the file.
I baked 29 frames, which produced 7.24 GB of simulation data.

The main idea here is that I don't render the domain cube at all. Instead, I use the generated smoke data to control the interior volume of the sphere (so the outer boundary of the volume is spherical, not cubic).

I like the sound of the method:
